This week belongs to our KFB fellow blogger Rakhee who blogs at Thesimplepleasuresofbaking. Her blog is fairly recent but in this short time she has managed to dish up so many recipes its commendable. I chanced upon her chicken momo recipe, and thought of replacing the dough wrappers with some lettuce leaves. Worked wonders, afterall the Chinese also steam cabbage rolls like this so lettuce is a fairly good substitute.
Ingredients:
- Large lettuce leaves: 7-8 nos
- Chicken mince: 1 cup
- Mushroom: 1 large
- Spring onions: 2 stalks
- Garlic: 2 large cloves
- Ginger: 1/2 inch shredded
- Soy sauce: 1 tbsp
- Vinegar: 1 tsp
- Mirin: 1 tsp (optional)
- Sesame oil (or vegetable oil): 1 tbsp
- Green chilly: 1 no
Method:
- Finely chop all stuffing ingredients and mix well with the chicken mince, seasoning ingredients and oil
- Marinate for at least an hour, or as long as possible
- Roll into lettuce leaves
- Steam for about 15 mins
- Serve with chilly garlic dip

I like the simplicity and healthiness of this dish. The leaves look a bit sad at the end though, so I might try it with cabbage for comparison.
thanks.
