On a rush notice for a Shutki recipe (dried fish), here goes my favorite:

Alu diye morola shutki (Dry morola fish with potatoes)

Ingredients:

  • Dried fish – 100 gms
  • Potatoes – 2 medium
  • Onion – 1 no.
  • Ginger-garlic paste – 1 tbsp
  • Green chilly – 1-2 nos
  • Salt – to taste
  • Mustad oil – 1 tbsp
  • Coriander leaves for garnish

Method:

Soak the dried fish in warm water; alternatively microwave the fish with water and discard the water. Clean fish thoroughly and sqeeze it dry. Could add a dash of lime juice if you want to suppress the smell.

Heat mustard oil in a wok/ frying pan. Add the chopped onion, ginger garlic paste, chopped potatoes, dried fish in that order, frying for a minute before adding every next ingredient. Cover with a lid and cook on very low heat till potatoes are done. One could splash some water if required for the potatoes to cook.

Open lid, add split green chilly, stir till the mixture appears dry and slightly oily.

Taste before seasoning with salt. I like to add a pinch of sugar (yes I am ghoti, thank you).

Garnish with coriander leaves.

Serve with piping hot steamed rice.
