This is a bizarre combination as I figured after sharing it on a group forum. Chicken and cucumber hasn’t been seen before is what I was told. Anyhow, point is I had to take something healthy to work (in observance to my detox week). I ordered for some fresh chicken the night before and decided to rustle this up for the day after.
Chicken salad with cucumber and apples
- Chicken breast: 1 piece
- Cucumber: 1 no., cubed
- Apple: 1 small, cubed
- Walnuts: 4-5, coarsely chopped
- Coriander leaves: chopped
- Green chilly: 1 no.
- Salt
- Pepper
- Olive oil
- Lime juice
Method:
Microwave the chicken breast in salted water for 6 mins. Rest till cool. Shred and add to the remaining ingredients. Toss and serve.
PS: I found that microwaving the chicken for 6 got me the juiciest ever chicken shreds. Until this time I strictly believed chicken is one useless piece of meat that always either overcooks or undercooks or hardens. This was like accidentally discovering unicorns exist.
