After binging the whole of last month on pretext of Durga Puja and then Diwali (and of course visiting folks back home in food city), I came back to Delhi all guilty and bloated. On my way to the Kolkata airport, I suddenly remembered and asked ‘Mom you forgot to pack the cashews you promised’. She looked away from me and out of the window and calmly said ‘I did not forget. I just thought you should give them a break and reduce a few kilos now’. There it was, the day I had never imagined I would ever live to see. My mom telling me I was fat. After years of accusing me of inducing bulimia, finally she saw the truth. And it took me 2 months of hard core partying and binging and lazying around to prove it to her I was not bulimic. Ok I might have gotten a little carried away in turn; should have stopped eating when I touched 52 kilos but alas, now I have 4 extra kilos to shed. And its not the kilos am worried about, its the wrong inches at the wrong places. I am not particularly excited about curves on my face or tummy or hips. Anyhoo, so I came back and promised myself a detox routine – not an absolute one but kinda there.
I would try and stay away from sweets and ermm..the most difficult..booze. I would eat minimal carbs and that too during the day. Would stick to carb-less early dinners. My glossary when it comes to carb-less menus are largely limited. I can only think of soups and salads, loaded with veggies and fruits. Thankfully its winters right now, so the wide variety of vegetables available makes my job easier.
So here’s what I rustled up for last night’s dinner in about exactly 6 mins.
Prawn cocktail meets Waldorf Salad
Prawns (medium sized, shelled and deveined): 8-10 pieces
Apple: 1 no. cubed
Cucumber: 1 small, cubed
Coriander leaves: chopped
Green chilly: 1 chopped
Gherkins: 2 chopped (optional)
Walnuts: 6-7 nos, chopped
Eggless mayonnaise: 2 tbsp
Lime juice: 1 tsp
Olive oil (EVOO)
Prawn Cocktail meets Waldorf salad
Like my usual lazy hungry self, I made good use of my microwave in saving time.
I dunked the prawns and half of the chopped apples in some water with a pinch of salt and microwaved it for 3 mins.
Meanwhile I peeled and chopped the cucumber, walnuts, gherkins.
Mixed everything together with the remaining apple cubes, mayo, dash of lime juice, pinch of salt, freshly crushed black pepper, chopped green chilly.
Topped it with some EVOO and chopped coriander.
Left it in the fridge for about 10 mins, and dug in.
I wanted some mushy apples but you could avoid stewing the apples if you like it crunchier.
I did not have celery, but if you do, please replace coriander with celery like in an original Waldorf.
